Here's how I harvest musk thistle stalks when I forget to bring my gloves. Chop off the leaves with a pocket knife, top the developing flower head, and cut it off at the base. After this you can peel the tough outer skin and fibers using the same knife or even your teeth. The tender inner stalk tastes like a mix of celery, cucumber, and melon.
